Tairov". popup.description2 It was established that the high content of ethyl alcohol and pH in sparkling wines of the Pet Nat type makes it possible to work with more mature grape varieties, which is a great advantage in conditions of climate change. It was determined that by the content of excess pressure, Pet Nat can be attributed to the category of “semi-sparkling wines”, the excess pressure of which is not less than 1 bar and not more than 2.5 bar when stored at a temperature of 20°C in closed containers. It was proven that the use of the technological method of removing sediment from a bottle of a finished drink ensures the receipt of finished products with a slight opalescence and turbidity of the wine within 5.16 - 9.56 NTU. It was investigated that in terms of sparkling properties, Pet Nat exhibits the properties of heterogeneity and is characterized by the presence of a small number of gas bubbles (33.6…82.5 cm-3), a long course of the “play” process (514.7…690.5 s) of small-sized bubbles (0.312…0.621 mm). Based on the results of the research, the basic technological scheme for the production of wines of the Pet Nat type was improved, and TU U 11.0 - 05431532 -001:2023 was developed for the production of “PET NAT”.
