Purpose - to develop scientific approaches to the analysis of biological risks in order to produce safe products of good quality. Research methods - clinical, biochemical, immunological, organoleptic, pathological, pathologic, bacteriological, parasitological, statistics. Scope - veterinary medicine. Analyzed epizootic situation of diseases of cattle, horses, pigs, rabbits and poultry. The analysis of the implementation of the program of veterinary-sanitary control of Salmonella in poultry Ukraine for 2012-2013. Analyzed the incidence of animal echinococcosis, sarkotsystozom, toxoplasmosis. Studied organoleptic properties, fatty acid composition of bacon pigs and amino acid composition of pork for echinococcosis and sarkotsystozu, conducted microbiological research products of slaughter, depending on the intensity of infestation. Established negative impact of these diseases on meat quality. For the first time in Ukraine developed "Guidelines on the analysis of biological risks (risk of zoonoses)." Logically highlights the purpose and objectives of risk analysis, risk analysis methodology. An important section is the risk analysis, which clearly set out principles for determining risk identification hazard (risk) assessment, risk management and communication of risk.
