For the purpose of identification of grape varieties by number of biologically active substances in vegetative raw materials (leaves, shoots) and in the waste products of winemaking (pomace, seeds, combs) should explore new grape varieties, and based on the obtained data, analysis and methodologies necessary to develop a new, malozatratnye highly effective and environmentally safe technology of extraction of biologically active substances. According to the results of the research revealed that some of biologically active substances (BAS) of grapes, namely the polyphenolic compounds red varieties are quite valuable and useful for human health. The main properties of these polyphenolic compounds is the high P-vitamin activity and the ability to play the role of antioxidants in the process of biochemical transformations taking place in the human body.
