It is proved that the use of a steam screw-scraper mixer in the improved vacuum evaporator helps increase contact area of the product with the heating elements. Rational ranges of the absorbing ability of raw apples (3, 6, 9 and 12 ... 15 microns) are determined and rationality of using the heating element of GPPRInVT for conducting IR-drying of fruit and raw berries is proved through the determination of its surface temperature in the range of the radiating ability of 5 ... 15 microns. Rational frequency of raw material vibration (4 s-1) is determined at the combined application of the PRENWT heating element and vibration mechanism, which reduces drying process by 21%. Organoleptic assessment of "Carrot" РК, having natural color and rich taste in comparison with the traditional carrot concentrate, is obtained. The maintenance of vitamin C content in raw apples is determined, since its weight increases in proportion to its decrease per 100 g of raw material during drying of HC infrared dryer. Principal schemes for the manufacture of separate concentrates and dried plant semi-finished products are offered. Economic efficiency of the results of the research by implementing VC IR-20 drying unit will ensure 36% decrease in specific energy consumption compared to a dryer based on TENs, the annual economic effect will amount to 16.8 thousand UAH, and the expected payback period is 5 months.
