Rational frequency of raw material vibration (4 s-1) is determined at the combined application of the PRENWT heating element and vibration mechanism, which reduces drying process by 21%. Organoleptic assessment of "Carrot" РК, having natural color and rich taste in comparison with the traditional carrot concentrate, is obtained. The maintenance of vitamin C content in raw apples is determined, since its weight increases in proportion to its decrease per 100 g of raw material during drying of HC infrared dryer. Principal schemes for the manufacture of separate concentrates and dried plant semi-finished products are offered. Economic efficiency of the results of the research by implementing VC IR-20 drying unit will ensure 36% decrease in specific energy consumption compared to a dryer based on TENs, the annual economic effect will amount to 16.8 thousand UAH, and the expected payback period is 5 months.
