The transition to industrial volumes of food production requires new technological solutions. In particular, the full realization of the potential of raw materials components can intensify production. The production of food products with a heterogeneous structure with given organoleptic parameters requires the use of controlled processes of modification of the functional and technological properties of the formulation components. Since the thermodynamically functional components in the raw material are inactive, resulting in incomplete realization of their potential, the need for the introduction of additional substances. Managed processes for the transfer of functional substances to the active form will ensure not only the receipt of products with new organoleptic properties, but also increase the efficiency of technologies for the processing of raw materials into final products. The solution of the set tasks is possible by scientifically substantiated use of technological principles - regimes and the introduction of additional substances capable of transferring the recipe components into the active form and stabilizing the disperse system, reducing the negative impact of technological factors that will allow the production of food products with a heterogeneous structure by industrial methods. Practical realization of scientific results will allow to create a wide assortment of food products with a paste, foam, emulsion structure and multifunctional semi-finished product. The work was carried out in two main directions, which are presented in separate parts: Part I Mousse technology based on wheat starch; part II Technology of dairy raw materials.
