The purpose of the research is to identify promising areas for improving the equipment for heat and refrigeration processing of foodstuffs on the basis of system-dynamic modeling. The object of the study is heat transfer processes and equipment for heat and refrigeration of food products. The subject of research is methods of heat and refrigeration of foodstuffs, modes of processing of foodstuffs and corresponding technological equipment. The essence of the research process consists in the analysis of perspective directions of improvement of the processes of heat and refrigeration of foodstuffs, namely, the identification of the features of foodstuffs in the processing of heat and mass transfer means, the analysis of methods of processing of foodstuffs, the existing theoretical methods of study of heat and mass transfer, as well as the refrigeration. The basis of the work is the systematization of ideological proposals to achieve the goal. The end result of the research is to identify promising areas for improving processes in the production of food from raw materials, review the theory and technology of energy-efficient approaches in the heat and refrigeration of food raw materials; determination of the physical basis of processes in dryers, freezers, cabinets and other equipment used in the food industry.
