The results of this project can be used by the sunflower oil producers to achieve an increase in oil yield, an improvement of its quality, a reduction of the amount of fatty waste and an increase in the profitability of the production. popup.description2 The research work "Improving enzymatic degumming of sunflower oil" is devoted to the study of the efficiency of enzyme preparations with phospholipase activity to remove the phospholipids from sunflower oil as well as to the technology of the enzymatic degumming of sunflower oil. As a result of the work, it was found that new enzyme preparations with phospholipase C and A activity had higher efficiency in degumming of sunflower oil, namely, they provide a lower residual content of phospholipids in the oil and a higher oil yield than those that were traditionally used. The maximum degree of phospholipid removal from the oil as a result of enzymatic degumming was 84 %. It was proved that the obtained sunflower oil after enzymatic degumming has high-quality indicators, as well as antioxidant stability. It was found that the enzymatic degumming process can be intensified using ultrasound treatment. The results of the study prove the efficiency of new enzyme preparations with phospholipase activity using for removing of oil from sunflower oil waste. An increase in oil yield was observed when treating the oil waste with enzyme preparations Lecitase® Ultra and Quara® Boost.
