The effective use of raw material resources and the introduction of sustainable production chains for innovative food products with stable quality indicators and extended shelf life are the basis of Ukraine's food safety, which will ensure stable economic development of the country and determine its role in the international food market as a reliable partner. Research objective: scientific justification and development of resource-efficient technologies for special-purpose food products based on the principles of food combinatorics to ensure adequate nutrition for the population, including in emergency conditions, as an imperative for Ukraine's food safety.
