The purpose of the work is to develop a draft normative documentation on dried vegetables. The practical value lies in the fact that the developed technology will allow to avoid losses of products during storage, to preserve in the vegetables biologically active components (vitamins, enzymes). Methods of research - organoleptic, physico-chemical, methods of mathematical processing using computer technologies. The technology of dried vegetables production is scientifically substantiated. The rational regimes and the duration of vegetable drying are determined. On the basis of the results of the research carried out a draft normative documentation on dried vegetables was developed. The result of the use of the characteristics of ZTP-drying for hydrothermal processing of vegetables is the receipt of fast-growing vegetables that do not require further cooking.
