The object of research - the process of ultrafiltration concentration of protein-carbohydrate raw milk and its hardware design, semi-carbohydrate protein technology with the use of carotenoid vegetable raw materials. Subject Studies - semipermeable ultrafiltration membrane based on acrylonitrile-type PAN ultrafiltration modules flat filter elements turbulators equipment for ultrafiltration process, skim milk, buttermilk, whey and products of their ultrafiltration separation emulsion based products ultrafiltration derived protein-carbohydrate raw milk, milk-protein kopretsipitat buttermilk, carrot puree, pumpkin puree, stabilization system "Astri Gel" model food systems that contain these types of raw materials, semi-finished products of protein and carbohydrate supplemented with carrot puree and mashed pumpkin, products made with these semi-finished products prepared by the water used in the production of foodstuffs. The result of the project are the technological schemes of membrane separation and concentration of raw food and water for the food industry, providing for the use of energy-saving processes, such as ultrafiltration, nanofiltration and reverse osmosis. The rational modes and technological parameters for the relevant processes and scientifically proven combination of different membrane processes in a flow diagram. Based on the results of theoretical and experimental studies developed technology for semi-finished dessert structured products based on derivatives of ultrafiltration of protein-carbohydrate raw milk, which allows more efficient use of the food potential of milk and its products.
